Karst Pancetta

is air-dried bacon whose structure and composition are abundantly interwoven with muscle tissue. The blend of spices, dominated by pepper, gives the Karst Pancetta a rich flavour and taste, complemented with the sea salt from the pans of Piran. The curing in the karst climate lasts well over one month and gives the meaty bacon a special slightly rancid taste, which is the recognizable feature of this particular product from the karst region. The protected geographical indication means the protection of the tradition and of the technological process, which in the special karst climate makes the production of this product of exceptional quality possible.
